Tequila Don Julio Reposado is born of the highest quality agave plantations in the Los Altos region of Tequila in Mexico. Here the rich, clay soils produce well-matured and ripened blue agave plants from which only the best are selected for distillation and maturation.
After the careful cultivation and then harvesting of the blue agave, Master Distiller Enrique de Colsa overseas the handcrafting of the tequila. Enrique and his team ensure careful cutting of the agave plant, followed by its slow cooking, careful milling, and fermentation using an agave yeast strain. Then begins the double distillation in small vessels – known as ‘small batch’ – which results in a rich, distinctive taste.
‘Reposado’ means rested – and the next stage of the process is ‘resting’, or ageing in American white oak barrels for 8 months to give subtle richness and added complexity. The result is a tequila with an aroma of mellow, cooked agave and honey with subtle fruitiness and a slight smokiness.
To taste, Tequila Don Julio Reposado has soft, elegant hints of dark chocolate plus vanilla and cinnamon balanced by subtle notes of pear and apple with a smooth caramelised edge.
