Mango Fizz

This is a sophisticated mocktail that combines tropical flavours with homemade maple spice syrup and zingy Ginger Ale.
Add 1 tsp cinnamon, 3 cloves and 2 drops vanilla extract to maple syrup and allow the flavours to permeate for a few hours.
With a muddler, press down on 2 pineapple rings in a shaker to extract the juices and flavour.
Using a jigger, measure 15ml passion fruit syrup, 10ml maple syrup, 40ml pineapple juice, 15ml lime juice and ice cubes into the shaker.
Shake the mixture vigorously until the surface of the cocktail shaker feels chilled.
Using a cocktail strainer, strain over cubed ice into a Sling glass.
Top up the drink with 50ml Ginger Ale.
Place one pineapple leaf and one pineapple ring with one cherry in the middle on top of your drink to garnish.
Don’t snub good old H20. Stay refreshed by drinking water between drinks.
