How to make

  1. Add cinnamon, cloves and vanilla extract to maple syrup and leave to infuse.

    Add 1 tsp cinnamon, 3 cloves and 2 drops vanilla extract to maple syrup and allow the flavours to permeate for a few hours.

  2. Muddle pineapple rings in a shaker.

    With a muddler, press down on 2 pineapple rings in a shaker to extract the juices and flavour.

  3. Add passion fruit syrup, maple spice, pineapple juice, lime juice and ice to the shaker.

    Using a jigger, measure 15ml passion fruit syrup, 10ml maple syrup, 40ml pineapple juice, 15ml lime juice and ice cubes into the shaker.

  4. Shake until cold.

    Shake the mixture vigorously until the surface of the cocktail shaker feels chilled.

  5. Strain over ice into a glass.

    Using a cocktail strainer, strain over cubed ice into a Sling glass.

  6. Top up with Ginger Ale.

    Top up the drink with 50ml Ginger Ale.

  7. Garnish with a pineapple leaf and pineapple ring with a cherry in the middle.

    Place one pineapple leaf and one pineapple ring with one cherry in the middle on top of your drink to garnish.
