Vodka Apple Mojito

A modern twist on an all-time classic, Deborah’s version of the Mojito combines the clean, crisp flavour of Smirnoff No. 21 Vodka with the freshness of mint iced tea.
Half fill a teapot with cubes of ice.
Using a jigger, pour 50ml Smirnoff No. 21 Vodka, 50ml Pampero Blanco Rum, 295ml mint iced tea (made by steeping a mint teabag in hot water and cooling), 30ml lime juice and 30ml sugar syrup into the teapot.
Stir the mixture with a bar spoon until well combined.
Pour the drink carefully into two teacups over ice cubes.
With a sharp knife and cutting board, slice a wedge of lime, and place in the drink. Add a sprig of mint against the rim of the teacup to garnish.
