Grapefruit Smash by Lou Mckerrow

With depth of flavour and perfect balance, One Night is a cocktail with credentials. It’s the creation of Erik Lorincz, head bartender at The American Bar at The Savoy and a former World Class Bartender of the Year.
Fill a cocktail shaker with ice cubes.
Using a jigger, measure 45ml The Singleton of Dufftown, 10ml Pimento Dram, 10ml lemon juice, 35ml sugar syrup and a dash of egg white into the shaker.
Shake the mixture until the surface of the cocktail shaker feels chilled.
Use a cocktail strainer to strain the mixture into a short glass.
Add a few drops of aromatic bitters on top of the drink, and spritz over some violet spray for garnish.
Don’t snub good old H20. Stay refreshed by drinking water between drinks.
